Christmas dinner and desert can make trying to lose weight and be healthy quite difficult. With this recipe which has no added sugar or fat, you can have your cake and eat it! Even though it is only mid November, we found that the longer you leave your Christmas cake to mature, the better it tastes on Christmas day, so get baking as soon as possible.
You will need:
- 500g mixed dried fruit
- ½ cup chopped dried apricot
- 400g can crushed pineapple with juice
- ¼ cup fresh orange juice
- 1 teaspoon mixed spice
- 1 teaspoon baking soda
- 2 large eggs, with the whites and yolks separated
- 2 cups wholemeal self-rising flour
Method:
- Line the base and sides of 20cm squared cake tin with greaseproof paper.
- Place the mixed fruit, apricots, undrained pineapple, orange juice and spice in a saucepan.
- Bring the saucepan slowly to boil, simmer uncovered for 2-3 minutes and then remove the mixture from the heat.
- Cover the saucepan and allow the contents to cool.
- Stir the egg yolks (optional) and baking soda into the fruit mixture.
- Whip the egg whites in a large bowl until stiff.
- Fold in the fruit mixture, and then fold in the flour. The mixture should be firm.
- Spread the mixture into the cake tin and bake in the oven at 160C for 1 ½ hours.
- Cover the hot cake with foil and allow it to cool in the pan.
- On special occasions, you can decorate the top of the cake with some glace cherries and a few almonds.
