Campfire Chilli Cheese Baked Potatoes

Campfire Chilli Cheese Baked Jacket Potatoes

Serves 3 | 442 calories per serving

Ingredients:

  • 3 russet potatoes
  • 3 ounces cheddar cheese
  • Small bunch chives or scallions
  • 15 oz canned chilli

Method:

  1. Wrap the potatoes tightly in two layers of aluminium foil. Be sure to seal any gaps.
  2. Place potatoes in the coals of a campfire, but not directly in the flames. Allow to cook for one hour.
  3. When potatoes are nearly done, warm the chilli over the campfire or a camp stove
  4. When one hour is up, use tongs to carefully remove a potato from the campfire. Use a fork to check the potato is soft enough. If the first potato is done, remove the other potatoes from the campfire.
  5. Spoon chilli over potatoes. Top with cheddar cheese and chives.

 

Tip: You can bake the potatoes in the oven instead if you prefer – preheat the oven to 180°C. Bake potatoes for 1.5 hours or until crispy.

Serves 6 | Prep Time: 25 mins | Cook Time: 65 mins

Ingredients

  • 6 baking potatoes
  • 1 tbsp olive oil
  • 180g smoked bacon lardons
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1-2 tsp hot paprika
  • 1 tsp ground cumin
  • 2 tsp mustard powder
  • 2 tbsp tomato purée
  • 2 tbsp dark soft brown sugar
  • 1 tbsp black treacle
  • 75g ketchup
  • 2 x 400g tins haricot beans
  • 175g ham, shredded
  • Natural yogurt and parsley to serve

Method

  1. Preheat the oven to 180°C. Bake potatoes for 1.5 hours or until crispy.
  2. In a pan, fry lardons, then add onion, garlic, and spices.
  3. Stir in tomato purée, sugar, treacle, and ketchup. Add beans and water, season, and bake alongside potatoes.
  4. Add ham, return to oven for 30 mins, then serve with yoghurt and parsley.

Ingredients
For the Burgers

  • 400g wild Alaska salmon, skinned
  • 50g breadcrumbs
  • 1 egg white
  • 1 red chilli, deseeded and finely chopped
  • Zest and juice of 1 lime
  • 1 shallot, finely chopped
  • 1 tbsp sweet chilli sauce
  • 2 tbsp coriander, chopped

For the Relish

  • 2 shallots, roughly chopped
  • 1 clove garlic, crushed
  • 1 tbsp chilli oil
  • 100g cherry tomatoes, chopped
  • 200g tinned tomatoes
  • 4 tsp Worcestershire sauce

Method

  1. Pulse burger ingredients until smooth, shape into 8 patties, and chill.
  2. Sauté shallots and garlic in oil, add tomatoes and Worcestershire sauce. Simmer until thick.
  3. Pan-fry burgers until golden, then serve with relish on buns.

  3. Add parsnips and stock, then simmer until the parsnips are tender.
  4. For the pesto, blend chilli, coriander, parmesan, and pumpkin seeds. Slowly add olive oil to achieve desired consistency.

  • 250g unsalted butter
  • 4 Cox orange pippin apple
  • 1 lemon

  • Apple juice/ cider (optional)

Method

  1. First, clarify the butter by boiling it in a small pan.
  1. Peel, core and slice each apple into 8, then sprinkle over a little lemon juice to prevent the slices from browning.
  2. Heat some clarified butter in a non-stick frying pan, and add the apple pieces in one layer. Cook until the undersides are nicely tanned.
  3. Combine the sugar and cinnamon, then turn over the apple slices and sprinkle with the cinnamon sugar. They’ll start to caramelise quite quickly.
  4. Lift the apples into a dish. Pour a splash of the apple juice, cider, or water in the pan, bubble it up, then pour over the apples. Serve with crème fraîche.
