These pancakes are made simply from bananas and eggs – that’s it! It is gluten and dairy free and bananas are full of potassium and low in salt.
This is a simple, easy and delicious alternative to traditional pancakes so you don’t have to miss out on the fun!
Ingredients:
– 1 medium ripe banana
– 2 large eggs
Method:
- Peel the banana and mash it using a fork until no large lumps remain.
- Wisk the eggs and pour them straight into the banana, ensuring they are fully combined.
- Heat butter/frylight/vegetable oil in a pan to avoid the mixture sticking to the pan.
- Drop roughly two tablespoons of batter into the pan.
- Cook for about one minute, until the edges are cooked and the pancake looks golden brown underneath.
- Flip the pancakes gently using a spatula, to allow the other side to cook for a minute. You can flip the pancakes a few times in order to get them evenly browned.
- The pancakes are best served warm, and be creative with your toppings!
