It’s National Doughnut Week (6th May – 13th May) so we’ve found a healthy doughnut recipe for you to try at home. At only 180 calories (160 calories less than Krispy Kreme’s glazed, crème filled doughnuts), these doughnuts are vegan, baked instead of fried and contain 5.1 grams of protein and 4.5 grams of fiber.
You will need:
- 1 cup chickpeas (garbanzo beans), rinsed and drained
- ½ cup unsweetened almond or soy milk
- ¾ teaspoon baking powder
- ¼ teaspoon baking soda
- 2 tablespoons vanilla extract
- 1 teaspoon apple cider vinegar
- ½ teaspoon salt
- ½ cup sugar
- ¾ cup dark chocolate chips
- 1 cup whole wheat flour
Method:
- Preheat your oven to 180 C.
- Pop the chickpeas, almond milk, baking powder, baking soda, vanilla, apple cider vinegar, salt and sugar into a blender and whiz up until the mixture is smooth.
- Melt the chocolate chips in the microwave in a large bowl and pour in the smooth mixture from the blender and flour and stir until the mixture becomes a thick batter.
- Spray two doughnut pans (or muffin trays) with cooking spray.
- Using a small spoon, carefully fill each doughnut well and smooth out the batter with the back of a spoon.
- Bake for 8-10 minutes and then allow the doughnuts to cool in the pan for 5 minutes before moving them to a cooling rack.
- Enjoy in moderation. Adding on icing is optional but will add more calories!
