This quick and simple recipe provides the excitement and taste of a takeaway treat without all of the excess calories and fat content. Mmm’s Cottage Pie packet adds bulk, flavour, texture, and protein and only 135 calories for a very healthy vegetable curry. We’ve chosen to add chickpeas and spinach for added texture, flavour and nutritional benefits. However you can choose any of your favourite vegetables instead – just make sure that you boil or steam them to keep fat content down. If you serve this with rice, ensure that it is only 3oz of brown rice.

Ingredients:
- 1 pack of Mmm’s Cottage Pie
- 1 red onion, chopped
- 1/3 can of Chickpeas
- 2 oz/50g baby spinach
- 2 garlic cloves, chopped
- 1-2 tsp garam masala curry paste
Serve with:
3 oz/85g brown long grain rice
Method:
1. Steam the onion, garlic and baby spinach in a steam basket or a pasta strainer over a saucepan of boiling water for 10 minutes.
2. Empty the Cottage Pie into a bowl and add 170 ml of boiling water, whisk until fully dissolved, then transfer to a pan and cook for 3 minutes.
3. Turn down to a medium heat and stir in the garam masala and chickpeas with the Cottage Pie.
4. Once the vegetables are cooked add them to the curry.
5. Take off the heat and serve with rice.
