Vegetable Chilli Stuffed Peppers

Serves 1
450 calories per serving
Ingredients:
1 spray of low calorie cooking oil spray
1 pack of Mmm Vegetable Chilli
1 bell pepper (Your choice of colour)
1/2 cup canned red kidney beans
1 crushed garlic clove
1/2 chopped onion
2 tspn low fat grated cheese
1 tspn herbes de Provence
For extra spice, add Tabasco sauce or paprika
Method:
1. Pre- heat the oven to gas mark 4/180 ° C/fan oven 160 ° C.
2. Cut the bell pepper in half length ways, ensure the seeded core is removed, place upside down on a baking tray in the oven for 15-20 minutes.
3. Spray the oil in the pan, add the chopped onion and the crushed garlic, stir frequently for 5 minutes.
4. In a separate saucepan, empty the contents of the Mmm Vegetable Chilli and stir in 140 ml of room temperature water, add the herbes de provence and cook for 5 minutes.
5. In the meantime, add the red kidney beans to the onion and garlic, stir for three minutes, ensuring they are heated through.
6. Take the frying pan off the heat and add contents to the chilli mixture, stir so that all ingredients are blended together.
7. Take the pepper out of the oven, and spoon in the cooked chilli evenly into the two halves.
8. Sprinkle a teaspoon of the grated cheese onto each of the pepper halves.
Serve with a side salad or cous-cous.
