To carry on our theme of achieving a happy and healthy Summer with the kids, here are even more yummy recipes that both you and the kids will go crazy for and to top it off, we’ve thrown in a few extra health inspired festivals to keep both you and the children occupied all Summer long…

Embrace some Indian spice this Summer with this Mumbai Potato Wrap recipe. This help-yourself veggie supper is full of fresh flavours and spices that will wow your family! Not only is this dish low fat too but its simple to make so you can rustle it up after a long Summer’s day…

Mumbai Potato Wraps with Minted Yogurt Relish

Serves 4

Prep time: 10-15 mins

Cook time: 35 mins

Ingredients

  • 2 tsp sunflower oil
  • 1 onion, sliced
  • 2 tbsp medium curry powder
  • 400g can chopped tomato
  • 750g potato, diced
  • 2 tbsp spiced mango chutney, plus extra to serve
  • 100g low-fat natural yogurt
  • 1 tsp mint sauce from a jar
  • 8 plain chapattis
  • Coriander sprigs, to serve

 

  1. Heat the sunflower oil in a large saucepan and fry the onion for 6-8 mins until golden and soft.
  2. Stir in 1 and a half tbsp of curry powder and cook for 30 secs, then add the tomatoes and seasoning.
  3. Simmer, uncovered for 15 mins.
  4. Meanwhile, add the potatoes and half tbsp curry powder to a pan of boiling salted water. Cook for 6-8 mins until tender.
  5. Drain, reserving 100ml of the liquid. Add the drained potatoes and reserved liquid to the tomato sauce along with the mango chutney. Heat through,
  6. Meanwhile, mix together the yogurt and mint sauce, and warm the chapattis follow pack instructions.
  7. To serve, spoon some of the potatoes onto a chapatti and top with a few sprigs of coriander. Drizzle with the minted yogurt relish, adding extra mango chutney if you wish, then roll up and serve.

Berry Smoothie Lollies

Serves 6

Prep time: 10 mins + freezing time

Ingredients

  • 100g frozen mixed British summer fruits/berries
  • 250g thick plain low-fat yogurt
  • 2 tbsp maple syrup
  1. Put the frozen fruits, yogurt and maple syrup in a blender, and whiz until well mixed.
  2. Push the mixture through a sieve if you don’t like the thought of pips in the lollies.
  3. Pour mixture into 6 lolly moulds and put in the sticks.
  4. Freeze until firm (It doesn’t take long- just a few hours) and serve!

Activities

Festival-going may have changed since having children but there’s really no need to miss out. Summer is packed full of fun foodie events the whole family will love to experience new healthy tasty foods as well as burning some calories through walking and dancing. We’ve picked out the ones most geared up for kids but we haven’t sidelined adult indulgences either, so there’s plenty to keep everyone happy. Cornbury Music Festival is an eclectic mix of farmers, musicians, chefs, Morris dancers and plenty of families. The festival offers a quiet camping zone for children, an inspiring teen tent, as well as an impressive range of free arts and craft activities for all ages! (8th-10th July, Oxfordshire, Adult weekend ticket £170, Children’s 0-2 years free, 3-12 years £35, 13-16 years £115)

 

Camp Bestival has an out-of-space theme this year, with a pop-up planetarium, chemistry shows, freezing fog and much more. Adults can kick back to the sounds of Fatboy Slim, Tears For Fears and Katy B, and children can get up close to big names like Dick and Dom and Mr Tumble. Ludlow Food Festival is located in Ludlow Castle and around the town, this festival makes a scenic day or weekend trip. With more than a 160 independent food and drink stalls, hands-on workshops, pudding tasting and ale trails, there’s an abundance of fun, food and activity to keep a family entertained. There are also healthy kids’ cookery classes in the castle gardens, where kids can get stuck in and parents can pick up useful tips for lunch boxes, interesting dinners and ways of making vegetables fun. (9th-11th September, Shropshire, Day ticket from £8, Children 0-13 years free)

 

Aldeburgh Food Festival has an abundance of local food and drink to sample, as well as musical inspiration. There’s a cooking club for kids where they can make all manner of foodie creations. Familiar faces will include Valentine Warner, Thomisina Miers and Sarah Raven. (27th September- 13th October, Aldeburgh, Adult day ticket £8, Adult weekend ticket £14, Children 0-15 years free)
