Fudgy Chocolate Chip Pancakes

Pancake Day is on the 28th February and it can be difficult to resist the temptation to dig in and over-indulge with heaps of maple syrup and whipped cream on your pancakes. This recipe for fudgy chocolate chip pancakes is 202 calories per serving (including fudge and whipped toppings and raspberries). This recipe was found on myrecipes.com and was originally by the Oxmoor House Eating Collection.

You will need:

  • 1 cup all-purpose flour (for a healthier option, try making using whole wheat flour)
  • ¼ cup cocoa
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup low-fat buttermilk
  • 1 tablespoon olive oil
  • 1 large egg, lightly beaten
  • 1/3 cup dark chocolate chips
  • Cooking spray

For the toppings (these can be optional depending on how much of a sweet tooth you have, although at The Slimming Clinic, we encourage more fruits!):

  • 9 tablespoons fat-free hot fudge topping
  • 9 tablespoons frozen fat-free whipped topping, thawed
  • 9 tablespoons fresh raspberries

Method:

  1.  Combine the flour, cocoa, sugar, baking powder, baking soda and salt in a large bowl and stir with a whisk.
  2. Combine the buttermilk, oil and egg in a separate bowl and then add to the flour mixture. Stir until well blended and then add in the chocolate chips.
  3. Spoon a ¼ cup batter for each pancake onto a medium non-stick skillet coated with cooking spray. Turn the pancakes when the tops are covered with bubbles and the edges look cooked. Please note that the chocolate will burn if the pan is too hot.
  4. Microwave the hot fudge topping according to the package directions.
  5. Cut each pancake in half and top with fudge topping, whipped topping and fresh raspberries.
  6. Serve immediately and enjoy.
