We found a recipe for these delicious and healthy breakfast muffins that are only 196 calories per serving and are a great, filling way to start your day. Delicious and delightful to eat, you’ll never want to forget having breakfast again.

You Will Need:

  • 2 large eggs
  • 2/3 cup packed light brown sugar
  • 1 cup mashed ripe bananas (about 2 bananas)
  • 1 cup buttermilk
  • 1 cup unprocessed wheat bran (also known as Miller’s bran. Do not substitute bran cereal in this recipe)
  • ¼ cup canola oil
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • ¾ cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ ground cinnamon
  • ¼ teaspoon salt
  • 1/2 a cup of chocolate chips (optional)

Method:

  1. Preheat the oven to 200 degrees and coat 12 muffin cups with cooking spray.
  2. Whisk together the eggs and brown sugar until smooth.
  3. Add in the bananas, buttermilk, wheat bran, oil and vanilla and whisk.
  4. In a separate bowl, whisk the whole-wheat flour, all purpose flour, baking powder, baking soda, cinnamon and salt.
  5. Make a well in the dry ingredients mixture, and add in the wet ingredients. Stir with a rubber spatula until just combined.
  6. Scoop the batter into the muffin cups.
  7. Bake the muffins until the tops are golden brown and spring back when touched lightly. This should take about 15-25 minutes.
  8. Let the muffins cool in the pan for 5 minutes before loosening the edges and turning them out onto a wire rack to cool slightly before serving.

If you would like to make these muffins as more of a treat, try adding ½ a cup of chocolate chips at the end of step 5 to satisfy your sweet tooth.
