We found a recipe for these delicious and healthy breakfast muffins that are only 196 calories per serving and are a great, filling way to start your day. Delicious and delightful to eat, you’ll never want to forget having breakfast again.
You Will Need:
- 2 large eggs
- 2/3 cup packed light brown sugar
- 1 cup mashed ripe bananas (about 2 bananas)
- 1 cup buttermilk
- 1 cup unprocessed wheat bran (also known as Miller’s bran. Do not substitute bran cereal in this recipe)
- ¼ cup canola oil
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- ¾ cup all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ ground cinnamon
- ¼ teaspoon salt
- 1/2 a cup of chocolate chips (optional)
Method:
- Preheat the oven to 200 degrees and coat 12 muffin cups with cooking spray.
- Whisk together the eggs and brown sugar until smooth.
- Add in the bananas, buttermilk, wheat bran, oil and vanilla and whisk.
- In a separate bowl, whisk the whole-wheat flour, all purpose flour, baking powder, baking soda, cinnamon and salt.
- Make a well in the dry ingredients mixture, and add in the wet ingredients. Stir with a rubber spatula until just combined.
- Scoop the batter into the muffin cups.
- Bake the muffins until the tops are golden brown and spring back when touched lightly. This should take about 15-25 minutes.
- Let the muffins cool in the pan for 5 minutes before loosening the edges and turning them out onto a wire rack to cool slightly before serving.
If you would like to make these muffins as more of a treat, try adding ½ a cup of chocolate chips at the end of step 5 to satisfy your sweet tooth.
