Healthy Pumpkin and Ginger Soup Recipe

As the weather is getting colder, it can be tempting to fill up on junk food.

We’ve found a healthy and delicious pumpkin and ginger soup recipe that is only 90 calories per serving and is bound to warm you up in the winter months.

You will need:

  • 1kg Pumpkin
  • 2 shallots
  • 75g ginger
  • Extra virgin olive oil
  • 1 litre organic vegetable stock
  • 125ml coconut milk
  • ½ tablespoon chilli powder
  • 1 lime

Method:

  1. Deseed and chop up the pumpkin. Peel and chop the shallots and then peel and finely grate the ginger.
  2. Place the pumpkin, shallots, ginger and some oil in a saucepan and sauté the vegetables until they are soft
  3. Add in the stock, coconut milk and chilli powder.
  4. Bring the ingredients in the saucepan to a boil and then let simmer for 40 minutes.
  5. Whiz up the contents of the saucepan in a food processor, serve and enjoy.
