Healthy Pumpkin and Ginger Soup Recipe
As the weather is getting colder, it can be tempting to fill up on junk food.
We’ve found a healthy and delicious pumpkin and ginger soup recipe that is only 90 calories per serving and is bound to warm you up in the winter months.
You will need:
- 1kg Pumpkin
- 2 shallots
- 75g ginger
- Extra virgin olive oil
- 1 litre organic vegetable stock
- 125ml coconut milk
- ½ tablespoon chilli powder
- 1 lime
Method:
- Deseed and chop up the pumpkin. Peel and chop the shallots and then peel and finely grate the ginger.
- Place the pumpkin, shallots, ginger and some oil in a saucepan and sauté the vegetables until they are soft
- Add in the stock, coconut milk and chilli powder.
- Bring the ingredients in the saucepan to a boil and then let simmer for 40 minutes.
- Whiz up the contents of the saucepan in a food processor, serve and enjoy.
