Healthy Pasta Soup Recipe
Pasta is one of those foods that a lot of people on a health kick may consider removing from their diet plan, usually due to the high carbohydrate content. But there are ways to get pasta back into your dietary plan without taking its toll on all your hard work! Here is a super tasty healthy pasta soup recipe, perfect for those evenings when it starts to cool down after a warm day, and it counts as 3 of your 5-a-day. Winner winner pasta dinner!
Ingredients (Serves 4):
- 1 tbsp olive oil
- 2 carrots, chopped
- 1 large onion, finely chopped
- 1l vegetable stock
- 400g can chopped tomatoes
- 200g frozen mixed peas and beans
- 250g pack of fresh filled tortellini (we used spinach and ricotta)
- Handful of basil leaves (optional)
- Grated parmesan (or vegetarian alternative), to serve
Method:
- Heat oil in a pan. Fry the carrots and onion for 5 minutes until starting to soften. Add the stock and tomatoes, and then simmer for 10 minutes. Add the peas and beans with 5 minutes to go.
- Once the veg is tender, stir in the pasta. Return to the boil and simmer for 2 minutes until the pasta is just cooked. Stir in the basil, if using. Season then serve in bowls topped with a sprinkling of Parmesan.
