Recipe: Spring Veggie Quinoa Salad

Ingredients:
180 grams quinoa, rinsed
475 millilitres water or vegetable broth
1 bunch asparagus, trimmed and chopped
60 grams baby spinach
150 grams cherry tomatoes, halved
70 grams radishes, thinly sliced
15 grams fresh parsley, chopped
25 grams feta cheese, crumbled (optional)
Juice of 1 lemon
2 tablespoons extra virgin olive oil
Salt and pepper to taste

Instructions:

In a medium saucepan, bring the water or vegetable broth to a boil. Stir in the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and liquid is absorbed. Remove from heat and let it cool.
While the quinoa is cooking, blanch the asparagus in boiling water for 2-3 minutes, then transfer to an ice bath to stop the cooking process. Drain and set aside.
In a large mixing bowl, combine the cooked quinoa, blanched asparagus, baby spinach, cherry tomatoes, radishes, and parsley.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to coat.
Sprinkle with crumbled feta cheese if desired. Serve chilled or at room temperature.
