Summer Salads

Salad is so diverse nowadays, there so many different vegetables to chose from and you can also add some carbs such as pasta, rice or cous cous if you want to jazz it up. I also like to add some fruit such as apple and dried raisin and a sprinkle of nuts to give it some crunch.

Sandwiches

Always essential at most picnics. Jazz this up by using different breads such as pitta, tiger, tortilla wraps or crispbreads. Instead of using shop bought sandwich fillers why not save on the calories by making your own filling from scratch.

Healthy Snack Ideas for a Picnic – Dips & Sticks

Here are some healthy snack ideas for a picnic that will add plenty of colour. For veg sticks you can use carrot, peppers, mangetout, sweetcorn, mushrooms, cucumber and sugar snap peas. You can buy healthy dips pre made such as bean based, tzatziki or humus. Try to avoid creamy dips as they will have more calories per serving. Below are some recipes for a bean dip and tzatziki dip that you can make at home.

Picnic Puddings

Why not end with a healthy pudding for you and your family and friends. I tend to take some wooden kebab sticks and a selection of fruit, then everyone can make their own fruit kebabs. Simply by piercing the fruit they enjoy most onto the kebab sticks. I sometimes serve this with low fat Greek yoghurt, so the fruit can be dipped in. Or for something extra special why not try making the strawberry cupcakes below.
