Pete is a TV chef who has judged MasterChef SA. He has shared this delicious Fettuccine Puttanesca recipe with us.
This healthy pasta dish is easy to make and super tasty for the whole family.

Ingredients
- 200g Fresh Fettuccine
- 5 Anchovy Fillets, finely chopped
- 1 Small Onion, finely chopped
- 3 Cups Tomatoes, blanched, peeled, and roughly chopped
- 3 tbsp Capers
- 4 tbsp Black Olives, stoned and roughly chopped
- 1 Chilli, de-seeded and finely chopped
- 1 Handful Basil, torn
- 100ml Extra Virgin Olive Oil
Method
- Heat the anchovies, onion, and olive oil together in a pan until the anchovies begin to disintegrate.
- Add the tomatoes, chilli, and capers. Cook until the tomatoes break down and form a sauce.
- Stir in the chopped olives and torn basil, then remove the pan from heat.
- Toss the blanched fettuccine in the sauce and mix thoroughly to coat the pasta.
Wine Pairing:
A Riesling or an off-dry Chenin Blanc pairs beautifully with this dish. Their acidity and floral or woody notes complement the robust flavours of the Fettuccine Puttanesca perfectly. Enjoy!
