Moussaka is a traditional baked Greek dish made with layers of aubergine slices and a meat sauce topped with a thick béchamel sauce.  We’ve put our own healthy twist on this weight loss recipe to reduce the amount calories and fat than the original dish. The use of MMM’s Spaghetti Bolognese and then a non-fat Greek yogurt as a béchamel sauce equivalent makes this dish nutritious and more suited towards a weight loss diet.  For cooking oil, The Slimming Clinic recommends Fry Light. With only 1 calorie per spray, this is a great alternative for standard olive oil and really contributes to the reduction in calories. Give this healthy recipe a go for yourself and add it to your weight loss meal plan for future reference.

Tip: As a starter option and to get into the Greek spirit, dip some cucumber sticks into low fat tzatziki – fabulously refreshing!

Ingredients (serves one, 350 calories per serving):

  • Low calorie cooking spray
  • 1 MMM’s Spaghetti Bolognese pack
  • 1/2 an aubergine, sliced into 1/2 cm rounds
  • 1 clove of garlic, chopped
  • 1/2 an onion, chopped
  • 28g parmasan, finely grated
  • 2 tsp oregano
  • 45g 0% fat Greek yogurt
  • Black pepper

Method:

  1. Fry the onion and garlic in the low-calorie cooking spray (1-2 sprays) for 4-5 minutes.
  2. Empty the bolognese sauce into a bowl, then add 145 ml of water and whisk until well dissolved.  Place in a pan and cook for 4 minutes and then add the onion, garlic and half of the oregano then turn down to a low heat.
  3. Give the aubergine slices a quick spray of cooking oil. Sprinkle with 1/4 of the oregano and black pepper to taste. Place under the grill for 1-2 minutes each side.
  4.  Mix the Greek yogurt with 1/2 the parmesan cheese.
  5. Place half of the grilled aubergines at the bottom of a small oven proof dish and then cover with the bolognese mixture. Then, add another layer of the aubergines, spoon over the yogurt topping and sprinkle the rest of the oregano and parmesan on top.
  6. Grill for 3-4 minutes until bubbling.
  7.  Your bolognese moussaka is now ready to eat. Serve this healthy recipe for weight loss with a side salad to complement the dish perfectly.
