So you’ve managed to get the body that you’ve been striving for leading up to the warmer months and understandably you want to maintain it. There are several reasons as to why people would gain weight during the summer months; ice cream, lacking the motivation to go for that jog because it’s so hot outside and excessive barbeque attending – if a ray of sun shines upon Britain for just a minute everyone begins to lug the BBQ out of the shed after its period of hibernation. Of course, the Summer is there to be enjoyed and there is nothing wrong with indulging every now and again. Try out some of these healthy recipes to make up for those days of hot dogs and double scoop cones!

 Healthy Breakfast- Berry Omelette

A protein filled start to your day to get you ready for a good few hours on the beach tanning it up. Taking less than 10 minutes to prepare and cook, this recipe will boost your energy and the  berries make it extra sweet and ideal for summertime.

Recipe:

  •  1 large egg
  • 1 tbsp skimmed milk
  • 3 pinches cinnamon
  • ½ tsp rapeseed oil
  • 100g cottage cheese
  • 175g chopped strawberries, blueberries and raspberries

Beat egg with milk and cinnamon. Heat oil in a 20cm non-stick frying pan and pour in the egg mixture, swirling to evenly cover the base. Cook for a few minutes until set and golden underneath. There’s no need to flip it over.
Place on a plate, spread over cheese, then scatter with berries. Roll up and serve.

Healthy Lunch – Tuna Pasta Salad

This recipe is perfect to take on the go, simply store it in a container and you’re all set, with less than 190 calories. Of course for those who aren’t a fan of tuna this can be substituted for other meats or a vegetarian option if you prefer.

Recipe:

  • 1 tsp finely chopped red onion
  • ½ tsp caper
  • ½ tbsp pesto
  • 1 tsp olive oil
  • 90g can of tuna in spring water, drained
  • 50g pasta
  • 2 sundried tomatoes, chopped

Mix the onion, capers, pesto and oil. Flake the tuna into a bowl with the pasta and tomatoes then stir in the pesto mix, simple!

Healthy Dinner- Egg and Rocket Pizzas

Wanting to settle down after a long day in the heat and ring up the nearest takeaway is extremely tempting, but why not take out just half an hour of your time and make a healthy, refreshing pizza style dinner of your own. Who doesn’t find the thought of decorating your own pizza appealing? This dinner is quick and easy to make, and with just 327 calories is perfect, and all with the proteins, vitamins and minerals you can find in eggs! (Please note, this recipe does serve 2, so for a single serving just half the amount of each ingredient.)

Recipe:

  • 2 seeded tortilla wraps
  • a little olive oil, for brushing
  • 1 roasted red pepper, from a jar
  • 2 tomatoes
  • 2 tbsp tomato puree
  • 1 tbsp chopped dill
  • 2 tbsp chopped parsley
  • 2 eggs
  • 65g pack rocket
  • ½ red onion, very thinly sliced

Heat oven to 200C/180C fan/gas 6. Lay the tortillas on two baking sheets, brush sparingly with the oil then bake for 3 minutes. Meanwhile chop the pepper and tomatoes and mix with the tomato purée, seasoning and herbs. Turn the tortillas over and spread with the tomato mixture, leaving the centre free from any large pieces of pepper or tomato.
Break an egg into the centre then return to the oven for 10 minutes or until the egg is just set and the tortilla is crispy round the edges. Serve scattered with the rocket and onion.
