Remember, Remember the 5th of November… Bonfire night. Think a big cosy bonfire, beautiful fireworks, children with sparklers and of course delicious food. Bonfire night is the perfect excuse to make some tasty healthy treats, Below are some of our favourites

Fried Cox apples with cinnamon sugar:
Serves 4, 199 calories per serving

Ingredients:

  • 250g unsalted butter
  • 4 Cox orange pippin apple
  • 1 lemon
  • 4 tablespoons caster sugar
  • 1 teaspoon ground cinnamon
  • Apple juice/ cider (optional)

Method:

  1. First, clarify the butter by boiling it in a small pan.
  1. Peel, core and slice each apple into 8, then sprinkle over a little lemon juice to prevent the slices from browning.
  2. Heat some clarified butter in a non-stick frying pan, and add the apple pieces in one layer. Cook until the undersides are nicely tanned.
  3. Combine the sugar and cinnamon, then turn over the apple slices and sprinkle with the cinnamon sugar. They’ll start to caramelise quite quickly.
  4. Lift the apples into a dish. Pour a splash of the apple juice, cider, or water in the pan, bubble it up, then pour over the apples. Serve with crème fraîche.

Campfire Chilli Cheese Baked Potatoes:

Serves 3, 442 calories per serving

Ingredients:

3 russet potatoes
3 ounces cheddar cheese
Small bunch chives or scallions
15 oz canned chilli

Method:

  1. Wrap the potatoes tightly in two layers of aluminium foil. Be sure to seal any gaps.
  2. Place potatoes in the coals of a campfire, but not directly in the flames. Allow to cook for one hour.
  3. When potatoes are nearly done, warm the chilli over the campfire or a camp stove
  4. When one hour is up, use tongs to carefully remove a potato from the campfire. Use a fork to check the potato is soft enough. If the first potato is done, remove the other potatoes from the campfire.
  5. Spoon chilli over potatoes. Top with cheddar cheese and chives.

Wild Alaska Salmon Bonfire Burgers:
Serves 8, 173 calories per serving

Ingredients:

Tomato Relish
2 small shallots, roughly chopped
1 clove garlic, crushed
1 tbsp chilli or olive oil
100g cherry tomatoes, roughly chopped
200g tinned tomatoes
4 tsp Worcestershire sauce
3 tsp honey
2 tsp white wine vinegar
1 tsp Tabasco sauce

Burgers

  • 400g wild Alaska salmon, skinned
  • 50g white breadcrumbs
  • 1 egg white
  • 1 red chilli, deseeded and finely chopped
  • Zest and juice of 1 lime
  • 1 shallot, finely chopped
  • 1 tbsp sweet chilli sauce
  • 2 tbsp chopped coriander
  • Pinch of salt and black pepper

Method:

  1. Place all the burger ingredients in a food processor and pulse to form a paste.
  2. Divide the mixture into 8, flour your hands and make round patties out of each portion. Cover and leave to chill in the fridge for at least ½ hour.
  3. Meanwhile, make the relish: sweat the shallots and garlic in chilli oil, add the cherry tomatoes and cook for 2 minutes before adding in the rest of the relish ingredients. Simmer for 15-20 minutes until glossy and thick. Season to taste then leave to cool.
  4. When you are ready to cook, heat a little oil in a non-stick frying pan. Carefully place the burgers in the oil and cook for 2-3 minutes a side, over a moderate heat, until firm and golden brown.
  5. To serve, slice the burger buns in half, top with soured cream, Alaska salmon burger, relish and coriander leaves.

Classic Cookie S’mores:
Serves 8, 194 calories per serving

Ingredients:

16 chocolate chip cookies
8 marshmallows
8 tsp nutella (or something equivalent)

Method:

  1. Preheat the grill to high and line a baking sheet with parchment.
  2. Put 8 cookies on the tray and top with marshmallow.
  3.  3. Grill until the marshmallow begins to brown and melt.
  4. Put a tsp of nutella on the other 8 cookies and sandwich on top of the melted marshmallow layer.
